Every Friday during the school year, Vigo hosts a tour of our facilities to 5th graders from local elementary schools. We have been doing this for over 10 years, and have served the kids various dishes that we thought would appeal to them. This is the most successful dish we have ever served on those tours. For more adult tastes, we often substitute Smoked Sausage for the hot dogs.
Ingredients:
2 Tbsp. butter or margarine
1- 16 oz. pkg. hot dogs, sliced in 1/4 inch rounds1- 16 oz. pkg. Vigo Yellow Rice
Garnish(optional):
canned green peas
Vigo Roasted Red Peppers
Preparation:
Bring 4 ½ cups (34 oz.) water to a boil in a saucepan with a tight-fitting lid. Add 2 Tbsp. butter or margarine, one 16 oz. package Vigo Yellow Rice and sliced smoked sausage. Stir for one minute, cover, reduce heat to simmer and cook undisturbed for 22-25 minutes.
(Optional): For a colorful tableside presentation, garnish with peas and Vigo Roasted Red Peppers.
