The way in which it is produced has remained unchanged overtime. Vinegar is made when alcohol and oxygen are converted into acetic acid and water through a process known as fermentation. An acetic acid bacterium is introduced into the liquid which ideally has an alcohol level between 10% and 13%. Once introduced, the fermentation process begins.
